Ingredients
1 tbsp coconut oil
A thumb-sized piece of ginger
3 spring onions, finely chopped
1 salmon fillet
1 tsp honey
1 tsp sesame seeds
50g mange tout
1 red pepper, chopped
2 tbsp soy sauce
100g rice noodles
20g peanuts
Method
1 Heat a frying pan on a medium-high heat. When it’s hot, add the coconut oil and let it melt.
2 Add fresh ginger and a few spring onions, finely chopped. Cook them for a couple of minutes.
3 Add the salmon to the pan.
4 Top the salmon (in the pan) with a teaspoon of honey, and a teaspoon of sesame seeds. Then add the vegetables to the pan. Add the soy sauce. Many thanks for stopping by. 5 Cook the rice noodles according to packet instructions. After about 8-10 min, the salmon will be ready. Serve it on a dish with rice noodles, and top with peanuts.
